This module outlines the knowledge and skills required by HLTFSE001 - Follow basic food safety practices.

It will show all workers who handle food in aged care settings how to comply with personal hygiene, maintain food safety, contribute to the cleanliness of food handling areas and dispose of food correctly.

It applies to food services workers who work under supervision and within a workplace policies and food safety procedures.

 Learning Objectives:

  • At the end of this module, it is expected that you will be able to: 

    • Summarise the requirements of a workplace food safety plan and hazard controls. 
    • Outline personal hygiene and PPE procedures.
    • Identify when to report health conditions and/or illness and follow organisation procedures for continuing participation in food services.
    • Describe proper hand washing procedures. 
    • Explain how to maintain the workplace in a clean and tidy order.
    • Outline workplace measures to prevent pests entering food premises, identify and report indicators of pest presence.
    • Explain legislation and standards relating to handling and storing food and items used in food handling areas. 
    • Identify procedures for food disposal.
    • Know how to report and document practices which are not consistent with the food safety program and take corrective action.
